Vegan Peanut Butter Banana Muffins

Sometimes we all find ourselves with overripe bananas. After making many batches of banana bread throughout 2020 I decided to switch it up. So here I am with these muffins. :)

Ingredients:

3 large overripe bananas

1/2 cup peanut butter (any nut butter will work)

1/2 cup monk sweetener

1/2 cup organic coconut sugar

1 tsp baking powder

1tsp baking soda

dash of salt

dash of cinnamon

lil bit of almond extract or vanilla or both we don't judge ;)

2 cups oat flour (easy to make just blend up oats or regular flour works too)

1 tbsp apple cider vinegar

1 tbsp grapeseed oil (any oil works too)

2 tbsp water

Directions:

  1. Preheat oven to 350 °f.

  2. Mash bananas first then add pb and sugars. Mix.

  3. Next flour, baking powder, baking soda, salt, cinnamon, almond extract. Mix after you add all.

  4. Lastly mix in acv, oil, and water.

  5. Add to tins and top with any nut or cinnamon. I topped with crushed pecans because I love their buttery texture.

  6. Bake for 20 minutes. Always keep an eye on muffins because they can bake different for different ovens.
